Earlier today I was asked to check a link on one of our Brand Ambassador blogs. While checking the link I noticed a recipe for Cauliflower Crust Pizza. Not having time to read the post I quickly glanced at the images and decided I would make it for dinner.

So after work I rushed to the market and got my ingredients. (Don’t forget I never read the post so I guessed on what was in it!) I got home and went straight to work on my crust. I grated the cauliflower and some cheese, mixed in some eggs and added some garlic salt and pepper. Then I pressed my dough into my large skillet and baked it, and baked it some more. It was taking such a long time to cook I thought I should peek at Megan’s post to see how long I was supposed to cook it for. This is when I realized that I missed a critical step and was supposed to cook the cauliflower! All said and done I cooked the crust for 40 minutes. It was not all the way done but I need to get dinner on the table.
So I pulled it out of the oven and it looked like this…
Then I added some cheese…
a little spinach… 
Then a lit bit (or should I say a lot) of sauce, more cheese, all my favorite toppings and some more cheese!
Then I baked it in a 450 degree oven for 20 minutes and this is what I got!
This is one of the best tasting things I have ever eaten and I am a food snob. It does not however taste a thing like pizza. It could be that I did not follow the instructions on the crust or that my crust never crisped. That said I would make it the exact same way over and over again!
How I made it
I grated 1 cauliflower head and a lot of cheese (parmesan reggiano, parmesan and jake)
I mixed 3 parts cauliflower to 1 part cheese, then added 2 eggs and garlic salt & pepper to taste. I mixed all ingredients together with my hands.
I drizzled (more like dumped) extra virgin olive oil on my skillet and patted the cauliflower mix into it.
I baked the crust in a 450 degree oven for 40 minutes.
Then topped with cheese mix.
I hand rubbed my pizza sauce (1/2 a cup of canned pasta sauce mixed with lots of tomato paste) over the cheese mix and added some spinach.
I added more of my cheese mix, and topped the pizza with my favorite toppings (pepperoni, spinach, fresh tomato’s, and fresh chopped garlic).
I baked it for another 20 minutes in a 450 degree oven.
Can I just say yum, yum!
